I just ordered 10 yellow, 10 green, 10 red 0603 smd led's I was wondering if any helpful advice would be necessary. I have a 15w soldering iron and I'm pretty good at solder. Just wanted to know what people thought. Thanks

The only advice i can give you is this... smd's are very fragile. Don't leave the heat on them for too long, and don't use too much solder. Also, something handy to have is some flux and some desoldering braid, and maybe a magnifying glass.

What exactly is flux? It seems like its gonna be more of a pain to take out the original led in the wiimote. Got any tips on getting these things out easily?

Flux is a paste-like substance, you take a tiny little bit on the end of a toothpick or use a tiny little paintbrush and apply it to the solder point or wire that you will be soldering. The flux acts as a type of "cleaning agent". it will make the solder stick basically. As for removing the smd leds, first take a desoldering braind and use it to soak up all the excess solder already on the smd's. Once they have most of the solder off, you can gently "slide" them from their solder pads by heating them up with the soldering iron. Just slowly work them sideways and slide them little by little. Don't try to force them, and you don't necessarily have to get them completely off the first go. Sometimes you have to slide them a little bit at a time to remove them without damage.

Just wanted to say thanks for the info. I'll have to pick up some flux at radio shack. Thanks all :)
