How to get rid of WeatherChannel, WiiWare and VC things

I don't have any clue and also not even a single file. Is there any update to the wad installer which kicks everything off the wii, to have it in it original boxed state

were VC/wiiware games installed via wad manager?

If so delete them via that and press the "-" button.

otherwise use the system menu to delete them.

For anything else you should use the system menu where possible because lathough it is possible to remove other channels....you do it at your own risk and could brick your wii.
