From what I've read so far, to play certain region free games I need to update firmware of my wii.
I recently got a modded JPN wii, came with JPN mario kart which works fine. I've read that it has the newest updates, so does that mean I can play NTSC super smash on my machine without bricking?

Only if you have that option enable on your modchip. each chip's region free abilities are enabled a different way. Some require you to solder 3-5 wires on various points on the wii circuit board; others require you to bridge a pair of 2 points together that are located on the modchip itself.
Another option for people who do not want to solder is freeloader. It is a disc you insert, load, eject, and you place your foreign game. IT is a pain but it is easy. Plus it is about $30. PM me for more info.
like i said before, it all depends on your modchip.

When I put the disc in, it's telling me to update (my wii is not connected to the internet) I ejected the disc. Does this mean I would brick my wii if I updated?

you should not except an update from a different region , they can brick your wii  use brick blocker , regionfrii or what ever program you want to use to ,ssbb will just leave duplicate channels on your wii ,you can download the duplicate channel remover from here
