I was told that to upgrade the PS3 HDD, you can just swap it. Is this true? I have a 160SATA collecting dust that I'd love to use in it.

Yes, any SATA HDD will work... but you'll need a laptop drive (2.5"). I have a 120GB Seagate on order from Newegg.
However, I did see somewhere that a Japanese guy got a standard 3.5" SATA drive to work by using extending the connections so that the drive is placed external to the unit.

any word if you can hook up an external USB HDD or jump drive to copy data to and from? i kinda want to upgrade it but not going to just yet.
unfortunately i was only able to obtain the 20GB version, so i don't even have the card reader. i got a 60gb to sell at launch so i'm happy.

the SATA connector on a laptop is a smaller pin then the 3.5 inch desktop ones... but if you just get a converter (2.5" pin to 3.5" pin) i'm sure it will work no problem...

Actually, all SATA connections are exactly the same. You're thinking of 2.5" IDE connectors; they are different from 3.5" IDE connectors. In fact, I just tried connecting the PS3 2.5" HDD to my PC and had no problem.
Unfortunately, Windows can't read the file system. I read somewhere that the PS3 uses a file system called, "Synergistic Processing Unit File System". I can't confirm this yet. Apparently Linux has drivers for this so I may try reading it under a Linux environment.
Once my 120G drive arrives, I plan to do some more experimentation.

And with the adaptors 750 SATA IDE works fine as well ..
I have heard that a USB IDE ink 1 terabyte works with YDL 5.0 cause it can read the file system ,unlike microsoft

You can plug usb drivers, but it need to be fat32 formated. Ps3 will detect and play the media, photos, music, video, etc...
